Lemony Scallop Boats

  1. Melt the butter in a medium skillet over medium high heat.
  2. Add scallops, zest, and garlic.
  3. Cook, stirring constantly until the scallops are just barely cooked through.
  4. 2-3 minutes.
  5. Add the dill and cook 30 seconds longer.
  6. Let cool to room temperature.
  7. Add the cheese, mayo, and pepper to a scallop mixture and stir to combine well.
  8. Refrigerate in a covered bowl until ready to use, up to a week.
  9. Preheat broiler, Broil 2-3 minute until puffed and golden.
