Light & Easy Pasta
- 1 (8 ounce) box garlic and olive oil Pasta Roni
- 14 cup chopped onion
- 14 cup chopped zucchini
- 14 cup chopped yellow squash
- 14 cup chopped fresh mushrooms
- 14 ounces Italian-style diced tomatoes
- 8 ounces clams (optional) or 8 ounces shrimp (optional) or 8 ounces scallops (optional)
- Cook pasta from box, or substitute Angel Hair Pasta.
- Saute the choped veggies in butter and olive oil.
- Add seasoning mix from the box of Pasta Roni to the saute veggies.
- If adding raw seafood, do so now and cook till almost done.
- Add diced tomatoes.
- (If adding canned or precooked seafood, add with the tomatoes).
- Heat through and serve over pasta.
