Fried Egg Sandwich with Cream Cheese-Cheddar Spread
- 3 ounces, weight Cream Cheese, Softened
- 1 Tablespoon Mayonnaise
- 18 teaspoons Salt
- 18 teaspoons Onion Powder
- 1/4 teaspoons Fresh Rosemary, Finely Chopped
- 18 teaspoons Fresh Ground Black Pepper
- 13 cups Sharp Cheddar Cheese, Shredded
- 4 slices Good Quality Bread
- 2 leaves Lettuce
- 6 whole Cherry Tomatoes, Sliced
- 4 slices Bacon, Cooked Crisp (optional)
- 2 whole Eggs
- 1 Tablespoon Butter
- Place the cream cheese in a small microwavable bowl, and heat in the microwave until soft.
- Add the mayonnaise, salt, onion powder, rosemary, and fresh ground pepper to taste.
- Stir until well combined.
- Add the shredded cheese.
- Microwave in 10 second intervals, until the cheese is melted and the mixture is smooth and creamy.
- Spread some of the cheese mixture over two slices of bread.
- On the other 2 pieces of bread, layer lettuce, tomato, and if desired bacon.
- Set aside.
- In a small skillet, heat a tablespoon of butter over medium heat.
- When the pan is hot, add an egg and cook for 3-4 minutes, then gently flip.
- Cook the other side for about 30 seconds, then remove pan from heat.
- Slide the egg out of the pan and onto the sandwich.
- Season with fresh ground pepper and salt.
- Top with the other slice of bread.
- Repeat the process for additional sandwiches.
- Serve immediately and enjoy!
