Honey Mustard-Pork Roast with Apple Stuffing

  1. Heat oven to 325F.
  2. Cook vegetables in margarine in large skillet on medium-high heat 3 to 5 min.
  3. or until crisp-tender.
  4. Remove from heat.
  5. Stir in 2 Tbsp.
  6. mustard, then bread, apples and seasoning.
  7. Open roast, cut-side up, on work surface.
  8. Spread with 2 Tbsp.
  9. of the remaining mustard; top with bread mixture.
  10. Re-roll roast; tie closed with kitchen string.
  11. Place on rack in roasting pan.
  12. Bake 2 hours or until done (145F).
  13. Transfer roast to carving board; let stand 10 min.
  14. Meanwhile, spoon 1 Tbsp.
  15. meat drippings into small saucepan; whisk in flour.
  16. Cook on medium heat 1 min., stirring constantly.
  17. Add apple juice and remaining mustard; cook and stir 5 min.
  18. or until sauce thickens and starts to boil.
  19. Remove from heat; stir in parsley.
  20. Slice roast; discard string.
  21. Serve meat topped with mustard sauce.
