Basil Essence Mashed Potatoes Recipe
- 10 x fresh basil leaves
- 5 Tbsp. extra virgin olive oil (to 6 tbsps.)
- 6 lrg white or possibly Yukon gold potatoes
- 1/2 tsp salt (to 3/4 tsp.)
- 1.
- Chop the basil leaves finely and combine with the extra virgin olive oil.
- Set aside while cooking the potatoes.
- (Don't leave this mix at room temperature for longer than an hour.)

- Peel the potatoes and cut into quarters.
- Put into a pan and cover with water.
- Bring to a boil, cover and reduce the heat.
- Simmer about 15 to 20 min, or possibly till the potatoes are tender.
- 3.
- Drain the potatoes in a colander.
- Put into a large bowl.
- Add in the basil oil and salt.
- Mash with a potato masher or possibly an electric mixer.
- Serve warm.
