Green Pea and Cauliflower Curry

  1. In a pot over medium-high heat, add the cauliflower and green peas and cover with water.
  2. Bring to a boil and cook until tender.
  3. Drain.
  4. Heat the olive oil over medium heat in a saute pan.
  5. Cook the onion, garlic, and ginger until browned.
  6. Add the turmeric, coriander, vindaloo, sugar, nondairy yogurt, and tomatoes.
  7. Cook for a 1/2 hour.
  8. Add the cauliflower and peas.
  9. Cook for another 1/2 hour.
  10. Serve hot over rice.
