Baked potato and broccoli casserole
- 4 cup cubed potatoes (approx. 3 large), or a small bag of baby potatoes, that's what I used for this
- 2 cup broccoli florets
- 4 slice bacon (regular cut), cook and crumble
- 1/4 cup olive oil, or 2 tablespoons + 2 tablespoons bacon drippings
- 1/2 tsp salt, or more, this was enough for me
- 1 1/2 cup shredded cheddar
- 2 scallions, finely sliced
- Preheat oven to 350F Fahrenheit.
- Spray 8x8 or larger casserole dish with cooking spray.
- In a large bowl combine potatoes, broccoli, olive oil, bacon drippings (if used), and salt.
- Stir in bacon and 3/4 cup of cheese.
- Spoon mixture into prepared dish and sprinkle remaining 3/4 cup cheese on top.
- Cover with foil and bake about 60 minutes.
- Uncover and bake for 15 more minutes or until potatoes are soft.
- Remove from oven and sprinkle scallions on top.
