Red Beans And Rice
- 1 (15 oz) can okra, drained
- 4 (16 oz) cans red beans, drained
- 3 (4 oz) cans stems and pieces mushrooms, drained & chopped
- 1 (15 oz) can tomato sauce
- 3 (14.5 oz) cans diced tomatoes
- 1 (28 oz) can crushed tomatoes
- 2 (14.5 oz) cans chicken broth
- 3 large cloves garlic, pressed
- 1 c. rice, cooked
- 2 (14 oz) pkg. Healthy Choice smoked sausage, sliced diagonally
- 1 1/2 c. onions, diced fine
- 1 1/2 c. celery, chopped fine
- 1 1/2 c. green peppers, chopped medium
- 1 tsp. thyme
- 1/4 c. Lea & Perrins Worcestershire sauce
- 4 Tbsp. Tony Chacheres Creole (Cajun) seasoning
- 1 tsp. Tabasco pepper sauce
- 1/2 c. dried parsley flakes
- 1/2 tsp. freshly ground pepper
- In a large stockpot put the okra, red beans, tomato sauce, diced tomatoes, crushed tomatoes, mushrooms, garlic Creole seasoning, tabasco, Worcestershire sauce, thyme, parsley flakes, pepper and 1 can of chicken broth.
- Cover and place over low heat. When mixture starts to simmer add the sliced smoked sausage.
