Mango Fool
- 375 ml PHILADELPHIA Cream For Desserts, double cream alternative
- 1/4 cup caster sugar
- 1 teaspoon lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 mangoes, pureed (approx. 1 1/2-2 cups) Whole Foods 2 ea For $4.00 thru 02/09
- mint sprigs for decoration
- WHISK together the PHILLY, sugar and lemon juice until soft peaks form.
- FOLD half the mango through the PHILLY mixture and layer alternately with remaining puree into 4 serving glasses or bowls.
- Decorate with mint and chill for 1-2 hours before serving.
