Pasta With Fire-Roasted Vodka Sauce

  1. In a large nonstick skillet, heat oil over medium heat, add onion and carrot, cook, stirring occasionally 4 minutes or until onion is softened.
  2. Add vodka and remaining ingredients except cream and pasta, bring to a boil.
  3. Reduce heat and simmer, stirring ocassionally, 15 minutes.
  4. Add cream.
  5. Serve over pasta.
