Pasta Picante(Fettuccine With Vegetable Sauce)

  1. In a large frying pan, cook bacon until crisp.
  2. Remove and set aside.
  3. Drain all but 2 tablespoons of the fat from the pan.
  4. Add garlic and the onion; cook until translucent.
  5. Add the zucchini and peppers; stir over medium-high heat until tender-crisp, about 2 minutes.
  6. Add tomatoes and green chilies, basil, parsley and oil.
  7. Cook, stirring frequently, until hot.
  8. Add salt.
  9. In heated serving bowl, toss fettuccine with vegetables and bacon; sprinkle with Parmesan and serve immediately.
  10. Makes 4 servings.
