Pasta Picante(Fettuccine With Vegetable Sauce)
- 6 bacon strips, diced
- 1 medium onion, chopped
- 1/2 green or red bell pepper, chopped
- 1/2 c. fresh basil or 1 Tbsp. dry basil leaves
- 2 Tbsp. olive or vegetable oil
- 1/4 c. grated Parmesan
- 3 cloves garlic, minced
- 1 large zucchini, cubed
- 1 (10 oz.) can Ro-Tel tomatoes and green chilies, diced
- 1/2 c. chopped parsley
- 1/2 tsp. salt
- 12 oz. fettuccine, cooked and drained
- In a large frying pan, cook bacon until crisp.
- Remove and set aside.
- Drain all but 2 tablespoons of the fat from the pan.
- Add garlic and the onion; cook until translucent.
- Add the zucchini and peppers; stir over medium-high heat until tender-crisp, about 2 minutes.
- Add tomatoes and green chilies, basil, parsley and oil.
- Cook, stirring frequently, until hot.
- Add salt.
- In heated serving bowl, toss fettuccine with vegetables and bacon; sprinkle with Parmesan and serve immediately.
- Makes 4 servings.
