Stroganoff Casserole aka Man Casserole
- 2 pounds Ground Beef
- 4 ounces, weight Canned Sliced Mushrooms, Drained
- 1/2 teaspoons Salt And Pepper
- 1 can (6oz) French Fried Onions
- 26 ounces, fluid Cream Of Mushroom Soup (Family Size)
- 1 cup Sour Cream, Divided
- 2 cans (16 Oz Each) Refrigerator Biscuits
- 1 teaspoon Celery Salt
- 2 whole Eggs
- Brown the beef and mushrooms over medium heat until meat is well browned.
- Season as you like.
- If necessary, drain off the grease.
- Place the meat and mushrooms in the bottom of a 9x13 or similar sized casserole dish.
- Top with 1/2 of the French fried onions.
- In a small saucepan, heat soup and 1/2 cup of the sour cream over medium heat.
- Once its heated through, pour it over the meat mixture.
- Top with remaining French fried onions.
- Flatten and cut the biscuits in half and place them on top of the onion layer like a puzzle, until no filling is showing.
- (You will have some biscuits left most likely, just bake them for tomorrows breakfast or something!)
- Mix the remaining 1/2 cup sour cream, celery salt and eggs.
- Pour over the top of the casserole, trying to hit only the biscuits.
- Bake at 375 F for 25-30 minutes.
- Serve with steamed green beans for a simple and delicious meal!
