seville orange curd
- 125 ml seville orange juice
- 2 tbsp seville orange zest
- 3 eggs
- 125 grams unsalted butter
- 200 grams caster sugar
- set heatproof bowl over a pan with simmering water.
- combine eggs, orange juice, zest and sugar in it.
- whisk until hot and add the butter.
- whisk until dissolved.
- continue stirring until it thickens.
- pour curd into sterilised glass jars and seal.
- leave to cool
