seville orange curd

  1. set heatproof bowl over a pan with simmering water.
  2. combine eggs, orange juice, zest and sugar in it.
  3. whisk until hot and add the butter.
  4. whisk until dissolved.
  5. continue stirring until it thickens.
  6. pour curd into sterilised glass jars and seal.
  7. leave to cool
