California Chicken Sandwich
- 1- 1/2 ounce, weight Cooked Chicken, Chopped Into Small Pieces
- 2 Tablespoons Apples, Diced Small
- 1- 1/2 Tablespoon Celery, Diced Small
- 1/2 teaspoons Onion, Diced Small
- 3 Tablespoons Greek Yogurt, Plain
- 1/4 teaspoons Dijon Mustard
- 1 dash Salt
- 1 dash Pepepr
- 2 slices Whole Wheat Bread
- 1 piece Lettuce
- 3 slices Cucumber
- In a bowl add chicken, apple, celery, onion, Greek yogurt, mustard, salt and pepper.
- Mix carefully until combined.
- On a piece of bread add lettuce and cucumbers and top with chicken salad and top with the other piece of bread.
