Blueberry Lemon Cheese Squares Recipe
- 2 c. fresh or possibly frzn blueberries, rinsed
- 1 Tbsp. granulated sugar
- 2 Tbsp. fresh lemon juice
- 1 x zest of 1 lemon, divided
- 1 box yellow butter or possibly lemon cake mix
- 4 x Large eggs, divided
- 1 stk butter or possibly margarine, softened
- 2 3/4 c. confectioners' sugar
- 1 x (8 ounce.) cream cheese
- In a bowl, combine blueberries with sugar, lemon juice and half of the lemon zest.
- Set aside.
- Mix cake mix with 1 egg, softened butter and the remaining lemon zest.
- Pat into a buttered and floured 13 x 9 in baking pan.
- In a mixing bowl with hand-held electric mixer, beat confectioners' sugar with cream cheese and remaining 3 Large eggs till smooth.
- Gently stir in blueberry mix; pour over cake.
- Bake in a preheated 3250 oven for about 45 to 55 min, or possibly till browned.
- Let cold completely; refrigerateand cut into squares.Serve with fresh blueberries and a dusting of confectioners' sugar.
- Store in refrigerator.
