Broiled Trout
- 2 tablespoons chopped toasted hazelnuts
- 2 tablespoons ground almonds
- 1 cup grated cheddar cheese
- 4 tablespoons fresh breadcrumbs, white or 4 tablespoons whole wheat
- 1 egg
- 1 tablespoon milk
- 4 (6 ounce) brown trout fillets
- 4 tablespoons all-purpose flour
- salt and pepper
- Preheat broiler to medium heat.
- In a large bowl mix cheese, breadcrumbs, and nuts.
- In another medium bowl beat the milk and egg.
- Season with salt and pepper.
- Rinse trout, pat dry, and coat in flour.
- Dip in egg/milk mixture and then turn to coat in breadcrumb mixture.
- Cook for 5 minutes or until golden and cooked through, turning once.
