Avocado Lime Chiffon Pie Recipe

  1. Puree avocado with lime juice.
  2. In top of double boiler combine: 1/2 c. sugar, gelatin and salt.
  3. Beat egg yolks lightly with lowfat milk and stir in.
  4. Stir over boiling water till gelatin dissolves, about 5 min Remove from heat; stir in lime peel, then avocado puree.
  5. Refrigeratetill mix mounds slightly when dropped from a spoon.
  6. Beat egg whites, gradually adding remaining 1/2 c. sugar, till stiff, but not dry.
  7. Fold into avocado mix; turn into pie shell.
  8. Refrigeratetill hard.
