Avocado Lime Chiffon Pie Recipe
- 1 x Avocado
- 1/2 c. Fresh lime juice
- 1 c. Sugar
- 1 pkt Unflavored gelatin
- 1/4 tsp Salt
- 3 x Large eggs, separated -- room temp
- 1/2 c. Lowfat milk
- 1 Tbsp. Grated lime peel
- 1 x 9 inch baked pie shell Sweetened whipped cream
- Puree avocado with lime juice.
- In top of double boiler combine: 1/2 c. sugar, gelatin and salt.
- Beat egg yolks lightly with lowfat milk and stir in.
- Stir over boiling water till gelatin dissolves, about 5 min Remove from heat; stir in lime peel, then avocado puree.
- Refrigeratetill mix mounds slightly when dropped from a spoon.
- Beat egg whites, gradually adding remaining 1/2 c. sugar, till stiff, but not dry.
- Fold into avocado mix; turn into pie shell.
- Refrigeratetill hard.
