Strawberry Meringue Cups

  1. Marinate berries in vanilla extract and 4 packets sugar.
  2. Refrigerate for 30 minutes.
  3. Prepare whipped topping according to package, substituting milk for water.
  4. Beat egg whites until soft peaks form.
  5. add 3 packets sugar.
  6. Continue beating until stiff, but not dry, peaks form.
  7. Fold egg whites into whipped topping.
  8. Serve 1/2 cup berries with 1/2 cup topping.
  9. Garnish each with strawberry half and mint sprigs.
