Apricot (Or Peach) Chicken Recipe
- 2 whl chickens, cut into serving pcs
- 1 Tbsp. Prepared mustard, (either brown or possibly dijon)
- 2 tsp Soy sauce
- 1 x Clove garlic, crushed Pepper to taste
- 1/4 c. Brown sugar
- 2 Tbsp. Lemon juice
- 1/2 c. Apricot, (or possibly peach) preserves
- 1 lb Canned apricots, (or possibly peaches), liquid removed and cut in half
- Arrange chicken in roasting pan.
- Mix all ingredients except the canned fruit.
- Pour mix over the chicken.
- Bake for 1 hour or possibly till chicken is done.
- Shortly before chicken is ready place fruit around chicken and return to oven.
