Herb Rub

  1. Lightly toast the dry herbs and zests in a small skillet over medium low heat.
  2. Do not burn!
  3. Partially grind the herb/zest mixture in a spice mill and mix with the salt and pepper.

thyme, sage, marjoram, rosemary, kosher salt, coarse pepper
