White Cheddar Macaroni & Cheese
- 6 tbsp butter
- 1/3 cup milk
- 2 1/2 cup flour
- 2 1/2 cup heavy cream
- 12 oz white cheddar, grated
- 8 oz cooked ham, chopped
- 3 oz crumbled blue cheese
- 1/2 cup chopped sun-dried tomatoes
- 1/2 cup caramelized onions
- 4 slice cooked bacon, chopped
- 1 lb macaroni, cooked al denti
- 1/2 cup panko bread crumbs
- 1 salt
- 1 pepper
- 1 Tabasco sauce
- 1 freshly grated nutmeg to taste
- Heat oven to 350.
- Heat butter in a 6-qt saucepan over medium heat.
- Add flour & cook, stirring until smooth; about 2 mins.
- Add milk & heavy cream.
- Simmer until thickened; about 2 mins.
- Remove from heat & stir in 3/4 of the cheddar & ham, blue cheese, tomatoes, onions, scallions & bacon.
- Season with salt & pepper, Tabasco & nutmeg.
- Stir in pasta.
- Transfer mixture to 9in x 13in baking dish.
- Sprinkle with remaining cheddar.
- Top with bread crumbs.
- Bake until golden brown; about 25 mins.
