Bacon Yogurt Quiche Recipe
- 1/4 c. minced onion
- 1/2 Tbsp. butter
- 4 x Large eggs
- 8 ounce yogurt
- 1 c. half-and-half
- 1 tsp salt
- 1/8 tsp freshly-grnd black pepper
- 1/8 tsp cayenne pepper
- 1/2 lb bacon cooked
- 1/4 lb Swiss cheese grated
- 1 x unbaked 9" pie shell
- In a skillet saute/fry finely minced onion in butter till soft; remove from the heat and set aside.
- In a bowl combine Large eggs, yogurt, half-and-half, salt, pepper, cayenne pepper and the cooked onion; stir.
- Crumble the cooked bacon and sprinkle in the 9-inch unbaked pie shell along with grated Swiss cheese.
- Pour the egg mix on top.
- Bake at 250 degrees for 35 to 40 min, or possibly till the top browns lightly and the center is set.
- This recipe yields 6 servings.
