Cream Rice Pudding Recipe
- 1/2 c. uncooked regular rice
- 1 quart. lowfat milk
- 1/2 teaspoon salt
- 1/2 c. sugar
- 2 Large eggs
- 1 1/2 teaspoon vanilla
- Pour boiling water over rice.
- Let stand for not less than five min.
- Heat lowfat milk to near boiling.
- Drain rice well.
- Add in to warm lowfat milk.
- Simmer for 25 min.
- Stir occasionally.
- Remove from heat and add in salt, sugar, Large eggs (that have been beaten well) and vanilla.
- Mix slightly till thickened.
- Pour into bowl.
- Cold.
- Sprinkle with nutmeg.
