Cherry Blossom-Colored Taramosarata For Cherry Blossom Viewing
- 2 Potatoes
- 50 grams Tarako
- 2 tbsp Mayonnaise
- 2 tbsp Milk or heavy cream
- 2 Eggs
- 1/2 tbsp Shiro-dashi
- 1 tsp Mirin
- 1 Vegetable oil
- 1 Broccolini (blanched in salted water)
- Prepare the A ingredients.
- Steam the potatoes until soft and mash with a large spoon or potato masher until smooth.
- Peel the membrane of the tarako and add to the mashed potatoes with mayonnaise, milk, salt and pepper.
- Prepare the B ingredients.
- Beat the eggs and mix in the shiro-dashi and mirin.
- Heat oil in a frying pan and quickly scramble the eggs.
- They taste better if you don't cook them too long and are soft-set.
- Put the circular molds on plates, fill with the taramosarata and put the scrambled egg on top.
- Remove the molds and garnish with the boiled broccolini.
- They look a bit different arranged in a large bento box.
