Oven-Roasted Vegetables
- 1 medium zucchini
- 1 large red onion
- 3 bell peppers (use one yellow, green and red)
- 2 medium carrots
- 1 bunch white mushroom
- 3 tablespoons butter
- 2 garlic cloves, finely chopped
- 1 teaspoon dried oregano
- salt and pepper
- Preheat oven to 450F.
- Slice all vegetables to your liking.
- Place all ingredients on a backing pan and place in the bottom broiler for 20 minutes or until vegetables are tender, stirring only once.
