Asian Cucumber Salad Recipe
- 1 1/2 x Cucumbers, peeled, minced
- 1 tsp Salt
- 1 x Jalapeno chili, seeded, chopped
- 2 Tbsp. Rice vinegar
- 2 Tbsp. Oriental sesame oil
- 1 Tbsp. Soy sauce
- 2 tsp Sugar
- Place cucumbers in medium bowl.
- Sprinkle with salt.
- Toss.
- Refrigerate1 hour.
- Drain cucumbers and return to bowl.
- Combine remaining ingredients in another bowl.
- Pour over cucumbers and toss to coat.
- (Can be prepared 1 day ahead.
- Chill.)
- Serves 2 to 4.
