Chili Lime Fish Salad
- 2 lbs tilapia fillets or 2 lbs white fish fillets
- 2 teaspoons tajin classic seasoning, with lime
- 2 tablespoons butter or 2 tablespoons olive oil
- 14 teaspoon cumin
- 1 lime, juice of
- 1 (9 ounce) package mixed salad greens
- 2 -3 cups Baby Spinach
- 1 large cucumber, peeled & sliced
- 1 12 cups homemade pretzel croutons
- Heat oven to 450F.
- Coat oven safe pan with oil or cooking spray.
- Place fish in pan.
- Sprinkle chili lime seasoning.
- Roast 5-7 minutes until opaque.
- Melt butter in small saucepan.
- Add cumin and lime juice and cook for 1 more minute.
- Before serving drizzle butter mixture over fish.
- Empty greens into large salad bowl.
- Add the cucumber and croutons and toss together.
- Place mixed salad onto 4 individual plates.
- Top the salad with the fish fillets.
- Drizzle on ranch dressing.
