The Parker's Not-Grilled Corn Salsa

  1. Cut raw corn off the husk.
  2. Blanch corn in 3 cups of salted, boiling water for 3 minutes and place in strainer.
  3. In a saute pan, heat olive oil or butter over medium heat.
  4. Add red pepper, corn, and chile and cook for 5 minutes.
  5. Turn heat to low and add mayo, cheese, garic salt and lime juice and stir, 30 seconds.
  6. Serve hot or warm.
