Baby E's Peanut Butter Bonbons
- 1 cup natural-style no-sugar-added peanut butter
- 34 cup powdered sugar
- 2 tablespoons softened butter
- 1 cup dried cranberries (any dried fruit) or 1 cup raisins (any dried fruit) or 1 cup dates (any dried fruit)
- 1 cup chopped nuts
- 2 cups dark chocolate chips (60% cacao)
- Mix together peanut butter, powdered sugar, butter, fruit and nuts.
- Shape into small balls, roughly the size of a teaspoon.
- Melt chocolate in microwave, about two minutes.
- Stir to melt remaining chips.
- Microwave in thirty second increments, as necessary to melt all chips, being careful not to scorch chocolate.
- Dip peanut butter balls in melted chocolate, covering completely.
- Lift out with a fork, and place on a wax paper lined baking sheet.
- Refrigerate for at least fifteen minutes, or until chocolate sets.
