Chase's Favorite Taco Soup
- 32 ounces tomato juice
- 6 -8 cups water
- 2 (2 1/2 ounce) packages taco seasoning
- 1 12 cups white rice
- 2 lbs lean ground beef
- 2 (15 ounce) cans kidney beans
- 2 (15 ounce) cans refried beans
- 2 (15 ounce) cans pinto beans
- 1 scoop tortilla chips
- shredded cheese
- In large pan combine tomato juice, half the water, taco seasoning & rice.
- Bring to a boil, then simmer until rice is cooked through.
- Meanwile brown ground beef in a skillet, drain and set aside.
- (I run mine through the food processor to make it less chunky, my kids eat it better this way!
- ).
- Slowly stir in the refried beans.
- (It's easier to mix them in first).
- Next combine the remaining ingredients.
- Bring to a boil and simmer for about 5 minutes.
- Just long enough to combine the flavors.
- Serve in bowls, sprinkle generously with cheese.
- Serve with chips.
