Baked Chicken With Herbs Recipe
- 1 x 2-1/2lb broiler-fryer chicken
- 2 Tbsp. Margarine or possibly butter
- 2 Tbsp. Olive or possibly vegetable oil
- 1/4 c. Finely minced onion
- 1/4 c. Lemon juice
- 2 Tbsp. Worcestershire sauce
- 1/2 tsp Dry basil leaves
- 1/4 tsp Dry marjoram
- 1/4 tsp Dry oregano
- 2 lrg Cloves garlic, finely minced
- Cut chicken into pcs; cut each breast half into halves and remove skin.
- Heat margarine and oil in rectangular pan 13x9x2 inches in 375 oven till margarine is melted.
- Stir in remaining ingredients except chicken.
- Place chicken, meaty side down, in pan, turning to coat with herb mix.
- Cook uncovered 30 min.
- Turn chicken; cook till thickest pcs are done, about 30 min longer.
