Amber Cucumber Relish Recipe

  1. Peel & chop cucumbers & onions.
  2. Add in salt & sufficient water to cover.
  3. Let stand 1 hour.
  4. Drain off brine.
  5. Boil vinegar, sugar & spices together for 20 min.
  6. Add in vegetables.
  7. Cook slowly till tender & all the ingredients have become yellowish.
  8. Pack into warm, sterilized jars.
  9. Seal.
  10. Process in boiling water bath for 10 min.
  11. Makes 4-5 pints.
