Amber Cucumber Relish Recipe
- 12 x Cucumbers
- 6 x White onions
- 1/2 c. Salt Water to cover
- 1 quart Distilled white vinegar
- 2 c. Cinnamon
- 1 tsp Mustard seed
- 1 tsp Dry mustard
- 1/4 tsp Grnd cloves
- 1 Tbsp. Tumeric
- Peel & chop cucumbers & onions.
- Add in salt & sufficient water to cover.
- Let stand 1 hour.
- Drain off brine.
- Boil vinegar, sugar & spices together for 20 min.
- Add in vegetables.
- Cook slowly till tender & all the ingredients have become yellowish.
- Pack into warm, sterilized jars.
- Seal.
- Process in boiling water bath for 10 min.
- Makes 4-5 pints.
