Moms Hungarian Goulash
- 2 lb stew meat. I used London broil cut into 1-inch pieces.
- 1 quarter cup flour
- 2 tbsp vegetable oil, divided
- 1 large onion thinly slice
- 2 tbsp smoked paprika
- 2 tsp each of garlic powder and salt
- 1/2 tsp ground black pepper
- 28 oz can of crushed tomatoes
- 2 tsp of tomato paste
- 1 and 1/2 cups beef broth
- 1 quarter cup sour cream
- 1 lb bag of egg noodles cooked according to package directions
- In a bowl mix flour with stew meat.
- In a large heavy stock pot heat half of oil over medium heat.
- Brown half of beef in oil until golden brown.
- Remove first batch and brown second batch of beef.
- Doing this step browns the meat instead of it steaming.
- Remove all cooked meat and set aside.
- Now add other half of oil and brown onions lightly.
- Mix in tomato paste with salt, pepper, garlic and paprika.
- Cook one minute.
- Add in a can of crushed tomatoes and beef broth.
- Lower heat to a simmer, stir completely scraping bottom of the pan.
- Place in cooked beef.
- Cover and simmer 1 hour 45 minutes until meat is tender.
- Check progress and stir occasionally.
- Finish sauce by stirring in sour cream .
- Serve over cooked egg noodles.
