Beef and Bean Wraps
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 400g lean minced beef Whole Foods 1 lb For $7.99 thru 02/09
- 410g can red kidney beans, drained and rinsed
- 1 cup beef stock Whole Foods 1 lb For $7.99 thru 02/09
- 1/3 cup tomato paste
- 1 teaspoon paprika
- pepper, to taste
- 2 tomatoes, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 Lebanese cucumber, chopped
- 1/2 red onion, finely diced
- 1 tablespoon KRAFT FREE* Greek Dressing
- 6 pieces Sorj bread
- 1/4 cup KRAFT Easy Cheese Light Cream Cheese Spread
- Heat oil in a large frying pan, add onion and saute for 1-2 minutes until softened.
- Increase heat to medium high, add mince and cook for 4-5 minutes, until browned.
- Add the beans, stock, tomato paste, paprika and pepper.
- Bring to the boil, reduce heat and simmer for 10 minutes, or until thickened.
- Combine the tomatoes, cucumber, onion and dressing.
- Set aside.
- Spread cheese spread down the centre of each piece of bread.
- Top with meat and tomato mixtures.
- Fold up the top and bottom of the bread, and then fold in from either side to enclose the filling.
- Cut in half to serve.
