Mini Kofta Pittas
- 600 g ground lamb
- 1 garlic clove
- 1 teaspoon cumin
- 2 teaspoons coriander
- oil
- 10 pita breads
- 200 g tzatziki
- 3 lettuce leaves
- 6 tomatoes
- Preheat the oven to 190C/170C Fan/Gas 5.
- Mix the lamb with the garlic, cumin, and coriander - it's easiest to use your hands.
- Season to taste.
- Shape into 20 small oval balls.
- Lightly grease a baking tray with the sunflower oil.
- Put the koftas on the tray, leaving a gap between each one, and cook in the oven for 15 minutes.
- Cool.
- Keep in the fridge until ready to pack.
- Just before you pack the picnic, carefully open out the mini pitta breads to make pockets.
- Put 2tsp tzatziki, 2 koftas, and some lettuce and tomato into each one.
- Pack the rest of the tzatziki in a small plastic container and serve with a selection of vegetable sticks.
