Open Sandwich - Tomato, Sardine, & Rocket
- 2 baguette or 2 seven-grain bread or 2 slices jewish rye bread, sliced thick
- 2 garlic cloves
- 2 ripe tomatoes
- 8 12 ounces sardines (a good quality packed in olive-oil)
- 14 cup thinly sliced red onion
- rocket
- Toast the bread.
- Cut the garlic cloves in half and rub the cut side over the surface.
- Halve the tomatoes and squeeze and rub the flesh over the bread.
- Top with rocket, sardines, and onions or top with sardines & onions & then with rocket.
- Serve with an ice cold beer.
