Spicy Chicken and Pasta Stew

  1. Cook pasta according to package directions, omitting salt and fat; drain and set aside.
  2. While pasta cooks, heat oil in a large saucepan over medium-high heat until hot.
  3. Meanwhile, cut chicken into 1-inch pieces.
  4. Add chicken and garlic to pan; cook 5 minutes or until chicken is done, stirring occasionally.
  5. Add broth, tomatoes, and crushed pepper; bring to a boil.
  6. Reduce heat, and simmer, uncovered, for 5 minutes.
  7. Add pasta and spinach to pan.
  8. Cook 2 minutes, or until spinach wilts, stirring occasionally.
  9. Ladle stew into individual bowls; sprinkle with cheese.
