Bacon And Cheddar Drop Biscuits Recipe
- 1/4 c. Onion, finely chopped
- 4 slc Crisply cooked bacon, finely chopped (reserve 2 Tbsp. of bacon fat)
- 1 3/4 c. Flour
- 2 tsp Double-acting baking pwdr
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 2 Tbsp. Cool vegetable shortening
- 3/4 c. Extra sharp Cheddar cheese, coarsely grated
- 2/3 c. Lowfat milk
- In a skillet, cook the onion in the reserved fat over moderately low heat, stirring, till it is softened; let mix cold.
- In a small bowl combine the onion mix with the finely chopped (do this in a food processor)
- bacon; season with freshly grnd pepper.
- Into a bowl, sift together the flour, the baking pwdr, the baking soda, and the salt.
- Add in the shortening and blend the mix till it resembles coarse meal.
- Stir in the bacon mix and the Cheddar; add in the lowfat milk and stir the mix till it just forms a soft sticky dough.
- Drop the dough by rounded Tbsp.
- onto a buttered baking sheet.
- Bake the biscuits in the middle of a preheated 425 oven for 15 to 17 or possibly till pale golden.
- Makes about 16 biscuits.
