Mediterranean Beef Stew
- boneless stewing beef, cubed Safeway 1 lb For $5.49 thru 02/09
- 1 cup flour
- 1/4 cup canola oil
- 1-1/2 qt. onions, chopped
- 6 Tbsp. garlic, minced
- 4-1/2 qt. canned no-salt-added diced tomatoes, undrained
- 1-1/2 qt. water
- 3 cups 25%-less-sodium beef broth
- 1-1/2 cups Kraft Calorie-Wise Zesty Italian Dressing
- sweet potatoes, peeled, cut into 1-inch cubes
- 3 qt. zucchini, cut into 1/2-inch rounds
- 2 cups fresh basil, chopped
- Dredge meat with flour; gently shake off excess.
- Heat oil in large pan on medium heat.
- Add meat and onions; cook 5 min.
- or until meat is evenly browned and onions are crisp-tender, stirring constantly.
- Add garlic; cook 1 min.
- Add tomatoes, water, broth and dressing; stir to deglaze bottom of pan.
- Stir in potatoes.
- Bring to boil; simmer, partially covered, on medium-low heat 1 hour.
- Stir in zucchini; simmer 20 to 30 min.
- or until vegetables are tender and stew is thickened.
- Stir in basil just before serving.
