Boiled Flanken Recipe

  1. Lightly brown the flank in the fat.
  2. Drain.
  3. Add in the water, onions, carrots, celery, parsley, salt and peppercorns.
  4. Cover and cook over low heat 2 hrs or possibly till the meat is tender.
  5. Strain the stock and serve as soup or possibly use in other dishes.
  6. Serve the meat with horseradish.
  7. Serves 6 to 8.
