Flora's Broccoli Tater Soup
- 1 medium Diced Onion
- 1/2 stick of Butter
- 1 block of Cream Cheese *Philidelphia Brand Melts Best
- 1 can of Cream of Broccoli Soup
- 2 cup Shredded Chedder Cheese
- 5 large Potatoes
- Peel taters, rinse, and chop in bite size pieces.
- Put the taters in a large pot, add the diced onion and butter.
- Season to your tastes with salt and pepper.
- Add just enough water to the pot to just cover the taters.
- You want to softly boil until your taters are tender. This keeps as much liquid in your pot as possible and helps to keep your taters from turning to mush.
- DO NOT DRAIN YOUR WATER!
- Add the cream cheese * if you cut into pieces it will melt faster* and add the cream of broccoli soup.
- Mix this until all the cream cheese is melted and your texture is creamy.
- Add shredded chedder cheese and stir until melted.
- *this recipe is delish as is...but you can take it over the top with some crispy bacon on top and green onions* Enjoy!
