Easy Jelly Cookies Recipe
- 2 c. flour
- 2/3 c. sugar
- 1/2 teaspoon baking pwdr
- 3/4 c. soft butter
- 1 unbeaten egg
- 2 teaspoon vanilla extract
- Raspberry, peach or possibly grape jelly
- Sift together flour, sugar and baking pwdr.
- Blend in butter, egg and vanilla extract to create a dough.
- Place on lightly floured cloth or possibly board.
- Divide into 4 parts shape into a roll, 13 inches long and about 3/4 inch thick.
- Place on ungreased baking sheets, 4 inches apart and 2 inches from edge of sheet.
- Make a depression, lengthwise, down the center of each with a knife handle.
- Fill depression with jelly or possibly jam.
- Bake at 350 degrees for 15 or possibly 20 min till light golden.
- While hot, cut diagonally into bars.
- Cold on wire rack.
- Makes about 5 dozen cookies.
