Banana Chocolate Crepes
- 4 Tbsp. plus 2 tsp. butter
- 1/3 c. flour
- 1 tsp. sugar
- 1 egg
- 1/3 c. plus 2 Tbsp. milk
- pinch of salt
- 1 oz. semi-sweet chocolate
- 1 1/2 Tbsp. light corn syrup
- 1/4 tsp. vanilla
- 2 bananas, sliced
- 1/2 pt. vanilla ice cream
- Melt 2 teaspoons butter.
- Put flour, sugar, egg, 1/3 cup milk, melted butter and salt in processor and whip until smooth.
- Let stand at least 1 hour.
- Melt chocolate with 2 tablespoons butter. Stir in corn syrup, 2 tablespoons milk and another pinch of salt. Bring to boil, then simmer until thick, about 2 minutes.
- Stir in vanilla.
- Oil a small frypan (medium-high heat).
- Pour 3 tablespoons batter and swirl to coat bottom evenly.
- Cook until brown; turn and brown other side.
- Repeat with remaining batter.
