Oatmeal Scotchies
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup Land O Lakes Butter, softened
- 3/4 cup sugar
- 3/4 cup firmly packed brown sugar
- 2 Land O Lakes All Natural Eggs
- 1 teaspoon vanilla*
- 3 cups uncooked quick-cooking or old-fashioned oats
- 1 (11-ounce) package butterscotch-flavored baking chips
- Heat oven to 375F.
- Combine flour, baking soda, salt and cinnamon in small bowl.
- Combine butter, sugar, brown sugar, eggs and vanilla in large bowl.
- Beat at medium speed, scraping bowl often, until well mixed.
- Add flour mixture gradually, beating at low speed, until well mixed.
- Stir in oats and morsels.
- Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake 7-8 minutes for chewy cookies or 9-10 minutes for crisp cookies.
- Cool 2 minutes on cookie sheet; remove to cooling rack.
