Bulghur With Red Pepper and Peas

  1. In a 2-qt.
  2. nonstick saucepan, heat the oil over medium-high heat.
  3. Add the peppers and onion and cook, stirring, until slightly softened, about 2 minutes.
  4. Add the broth and bring to a boil.
  5. Add the remaining ingredients and return to a boil.
  6. Reduce the heat and simmer, covered 15 minutes, or until all the liquid has been absorbed.
