Low-Cal Charlotte Cupcakes
- 2 cups rye flour
- 23 cup brown sugar
- 2 teaspoons baking soda
- 1 cup applesauce or 1 cup apple baby food
- 1 cup soymilk
- 13 cup molten butter
- 2 eggs
- 2 tablespoons cinnamon
- Mix flour, sugar, baking soda and cinnamon.
- Start adding eggs and soymilk, blending all the ingredients together as you go.
- Add appleasuce and butter, mix well.
- Pour into cupcake liners and bake for abput 25 minutes in an oven set up to 180C.
