Adrienne Barbeau's Yams Recipe
- 7 lb Yams, boil tender, cold, peel
- 1/2 c. Butter, divided use
- 1 pch Salt
- 1/2 tsp Pepper
- 1/3 c. Honey
- 1/2 tsp Nutmeg
- 1/3 tsp Cinnamon
- 3 x Pippin or possibly Granny Smith, apples - peel, core,
- Thin
- 1/4 c. Butter, cut squares
- Mash yams with 1/4 c butter,salt and pepper.
- Heat 1/4 c. butter with nutmeg and honey.
- Pour into bottom of casserole and layer with apples.
- Add in Mashed yams and top with cinnamon and 1/4 c. butter squares.
- Bake at 350F for 45 min till bubbling.
