Greek/Mediterranean Pizza
- 300 g a good sized handful pizza dough
- 23 cup hummus
- 12 cup seasoned chicken breast (pan-fried)
- 13 cup red pepper (sliced thin)
- 13 cup red onion (sliced thin)
- 1 tablespoon oil
- 2 teaspoons italian seasoning
- 12 teaspoon salt
- Prepare pizza dough.
- Stretch it to fit the pan, creating as thick or thin a crust as you wish.
- Place pizza dough in greased dish/baking tray with a little bit of cornmeal sprinkled on the bottom.
- Spread hummus onto the dough in the pan (as thin/thick as you would like - mine was about 1/4 inch thick).
- Fry chicken (or use any other cooked chicken you may have) in a pan with a little bit of oil, italian seasoning, and salt.
- Once the chicken is cooked through, place evenly over pizza.
- Spread red pepper and red onion evenly over pizza (to taste).
- Bake in a 350 degree oven for 10-13 minutes or until crust is golden brown on sides and bottom.
