Stuffed Turkey Roll

  1. In a bowl, combine egg, oats, 1/2 teaspoon salt and 1/8 teaspoon pepper.
  2. Add turkey and mix well.
  3. On wax paper, pat mixture to a 12 x 9-inch rectangle.
  4. In saucepan, cook onion and celery in butter until tender. Stir in sage, poultry seasoning, 1/8 teaspoon pepper and dash of salt.
  5. Toss bread cubes with mixture and 2 tablespoons water.
  6. Spread atop meat mixture. Roll up meat, jelly-roll style, starting from narrow end. Press edge to seal.
  7. Seal ends.
  8. Transfer roll, seam side down, to greased baking dish. Cut bacon slices in half, crosswise, and lay atop turkey roll.
  9. Bake, uncovered, in a 325u0b0 oven for 50 to 55 minutes.
  10. Makes approximately 6 servings.
