Coconut Crusted Chicken Satays
- 12 cup unsweetened coconut
- 1 teaspoon sugar
- 12 teaspoon salt
- 2 chicken breasts, cut in 1 inch slices
- 1 tablespoon olive oil
- 1 tablespoon chopped chives
- In bowl, combine coconut, sugar and salt.
- Mix well.
- Thread chicken onto skewers.
- Press chicken into coconut mixture, turning to coat.
- In large skillet, heat oil over medium high heat.
- Sear satays until bottom is golden brown, about 3 minutes.
- Turn and continue to sear chicken until cooked through.
- Transfer to a platter and sprinkle with chives.
