Coconut Crusted Chicken Satays

  1. In bowl, combine coconut, sugar and salt.
  2. Mix well.
  3. Thread chicken onto skewers.
  4. Press chicken into coconut mixture, turning to coat.
  5. In large skillet, heat oil over medium high heat.
  6. Sear satays until bottom is golden brown, about 3 minutes.
  7. Turn and continue to sear chicken until cooked through.
  8. Transfer to a platter and sprinkle with chives.
